    If the dates are a bit dry, soak them in warm water for about 5-10 minutes to soften. Drain well before using.

    Place the pitted dates in a food processor and blend until you get a sticky and homogeneous paste, scraping the sides if necessary.

    In a medium bowl, mix the tigernut flakes, oat flakes, freeze-dried blackcurrant powder, seeds, and a pinch of salt.

    Add the date paste to the bowl with the dry ingredients and mix well until all ingredients are well combined.

    Take about a tablespoon of dough and roll it between your hands to form balls about 2-3 cm in diameter.

    If desired, roll the energy bites in grated coconut, tigernut flour, extra freeze-dried blackcurrant powder, or crushed oats.

    Place the energy bites on a plate lined with parchment paper and refrigerate for at least 15-20 minutes to firm up.
