

Have you ever tried making mayonnaise with mushrooms? Today we offer you an egg-free shiitake mushroom mayonnaise that is very easy to make at home, paired with a vegetarian flatbread.






Soak 1 sachet of dried Shiitake Mushroom IoBoscoVivo for about 30 minutes.
In a jug for the hand blender, add the plant-based milk of your choice and the oil and start blending from bottom to top until the mixture begins to thicken, then add the juice of half a lemon.
Cook the Shiitake mushrooms in a pan for a few minutes and add them to the mayonnaise, blend everything and add a pinch of salt.
Ingredients for the flatbread: Cut the vegetables and brush them with oil and rosemary before putting them in the oven at 180°C for 15/20 minutes.
Take the vegetables out of the oven and brush them with a parsley sauce made with oil and 1 sachet of Shiitake granules IoBoscoVivo, then return everything to the oven for 3 minutes at 180°C.
