  • Grated lemon zest1/2
  • Extra virgin olive oilto taste

Preparation

  1. STEP 1 OF 3

    After boiling the Venere rice following the times and methods indicated on the package (usually about 40 minutes for organic rice), let it cool slightly. You can easily cook it in the morning to have it ready for lunch or dinner.

  2. STEP 2 OF 3

    To season it takes just a moment, thinly slice the zucchini with the help of a peeler, then add the chopped parsley, lemon zest, and extra virgin olive oil.

  3. STEP 3 OF 3

    If you wish, the zucchini can be previously marinated in extra virgin olive oil and lemon juice!
