Clean and cut the green beans. Cook them in a pan with a little oil and a cup of water for 10 minutes
Add the cleaned and cut zucchini. If necessary, add a little more water and cook for another 10 minutes
Meanwhile, prepare the other ingredients: cherry tomatoes, Tropea onion (diced), and chickpeas
Boil 400 ml of salted water and dissolve a packet of saffron in it
Spread the couscous on a tray and pour the boiling water over it. Cover for 5 minutes.
Fluff the couscous with a fork. Add all the vegetables (cooked and raw), chickpeas, and fresh basil.
Add a drizzle of EVO oil and mix.
