Pasta with sausage and stracchino is a simple and tasty first course, ideal even for autumn, I would say perfect for any occasion. A rich and flavorful dish, great to serve for a family lunch or a special dinner where you want to impress your guests.
To prepare orecchiette with sausage and stracchino. Sauté the chopped onion in a large pan with a drizzle of oil, after two minutes add the cherry tomatoes and the coarsely crumbled sausage,
Deglaze everything with some rosé wine and then let it cook for a few minutes.
If necessary, add a little cooking water. Meanwhile, cook the pasta in a pot with plenty of boiling salted water until al dente.
Drain it and toss it in the pan with the sausage, add the stracchino and let it melt well. Mix the ingredients well until creamy.
Serve the pasta hot with a sprinkle of pepper if you like, also great with a sprinkle of grated cheese.
Orecchiette with sausage and stracchino can be stored in the refrigerator, in a suitable container with an airtight seal, for a maximum of a couple of days.
