Soft focaccias are rustic-tasting treats, perfect for accompanying an aperitif with friends, to serve instead of bread, or as a snack for the little ones. They are super soft and have an irresistible rosemary aroma: a simple and tasty recipe!
Decide whether to knead by hand or with a mixer, pour the flour into a bowl or the stand mixer, add the yeast and mix while gradually pouring in the water. Cover with plastic wrap and let it rest for 30 minutes.
After the time has passed, add the salt and knead until it becomes a smooth dough (at least 10-15 minutes).
The dough should be slightly sticky to the hands, let it rest for another 30 minutes, then do a round of folds.
Let it rest again covered with plastic wrap in the turned-off oven for at least an hour or until it doubles in volume.
Then divide the dough into equal parts, place them in muffin molds previously oiled or sprayed with non-stick spray.
Let the focaccias rise until doubled, always in a warm environment (it will take about 30 minutes). When they have become puffy, make indentations with your fingers on the surface of each muffin.
Season with coarse salt, and rosemary if you like.
Steam bake for 20 minutes in an oven preheated to 220°C. (Place a bowl of boiling water in the oven to create steam)
Remove from the oven and let cool out of the pan for at least 10 minutes.
Your focaccias are ready!
The focaccias can be stored for up to two days in an airtight container or under a glass dome at room temperature. The ideal place to store them is inside the oven. Before consuming, you just need to heat them in the oven. Like all types of bread, you can also freeze the focaccias and defrost them as needed.
