Mix the 00 flour, rice flour, and all the water.
Once all the flours are absorbed, knead quickly, cover with plastic wrap, and set aside.
Cook the vegetables in a pan for about 5-7 minutes, they should remain crunchy (previously steam the broccoli).
Add the mix of soy sauce, ginger, garlic, and sesame seeds to the vegetables and mix everything together.
Take the dough, form a log, and cut small pieces.
Gently press with your finger, flattening them, so they take on the classic shape.
Cook in salted boiling water for 6-7 minutes (depending on the thickness).
Drain directly into the pan and mix.
Plate adding some fresh spring onion or other sesame seeds.
