
Crispy on the outside and super melty inside, these rice croquettes are perfect for using leftover rice. Easy and quick to prepare, they are ideal for a tasty lunch or dinner.












Cook the rice or use leftover cooked rice.
Add two eggs, a drizzle of oil, salt, pepper, Parmesan to the rice and mix everything together.
If the mixture is not firm, add Parmesan and/or breadcrumbs as needed.
With slightly oiled hands, form a ball, stuff it inside with ham and cheese, and carefully close it giving it the shape of a croquette.
Quickly coat the croquettes in breadcrumbs.
Cook them directly in a pan with a drizzle of oil until golden on both sides.
Serve hot and enjoy!
