Wash and dry the potatoes.
Make cuts with a sharp knife on the surface of the potatoes with their skin on, a few millimeters apart, cutting slightly more than halfway through each potato.
Grease well with an emulsion of oil and salt, even between the slices.
Cook in an air fryer for 40 minutes or in the oven at 190°C.
Stuff the various potato slices alternating cooked ham and provola.
Cook in an air fryer or in the oven for another 5/10 minutes until the provola melts.
