Preparation

    Cook the rice in plenty of salted water following the times indicated on the package, then drain and let it cool.

  2. STEP 2 OF 4

    In a large bowl, combine the cooled rice, drained tuna, drained corn, olives sliced into rings, and fresh cheeses cut into cubes.

  3. STEP 3 OF 4

    Season with extra virgin olive oil, white wine vinegar, and salt to taste, mixing well to blend all the ingredients.

  4. STEP 4 OF 4

    Place the rice salad in the refrigerator for at least 30 minutes before serving, so the flavors can meld well.
