Delicious squid rings and tentacles covered with a crispy golden crust, perfect to enjoy as an appetizer or main course. The recipe is easy and quick, ideal to cook in an air fryer to make them light and crispy without using a lot of oil.
Thaw the squid and rinse under running water.
Wash and cut the datterini tomatoes.
Chop the parsley.
In a bowl, combine squid rings and tentacles, datterini tomatoes, and drained pitted black olives.
Add the grated cheese.
Grate the lemon zest and add it along with the minced garlic clove.
Add the chopped parsley and breadcrumbs.
Season with extra virgin olive oil and salt, and mix well with your hands.
Cook in an air fryer at 180 °C for 20 minutes, shaking the basket halfway through cooking.

As an alternative to the air fryer, it is possible to cook in a ventilated oven at 180 °C for 25 minutes. Serve warm accompanied by stick fries prepared in the air fryer.
