
Cream of peeled dried fava beans blended and served with Greek feta and grilled peppers. A butter-free, easy, and quick recipe, suitable as an appetizer in individual cups, finger food, or as a main dish.
Wash the peeled dried fava beans and boil them in vegetable broth or water according to the times indicated on the package.
In the meantime, wash the peppers and grill them; then peel them and set them aside.
When the fava beans are cooked, sauté them in a pan with extra virgin olive oil and chopped shallots.
Blend the fava beans with an immersion blender until you obtain a homogenous cream; season with salt and pepper.
Cut the feta into pieces.
Assemble the plate: distribute the fava cream, add the grilled peppers and pieces of feta.
Drizzle with raw extra virgin olive oil, oregano, and pepper; serve with croutons.
