

.. it happened again. I boiled a whole cauliflower and since I am the only one who eats it in my house, almost all of it was left over. I don't want to consume it again simply boiled, so? Let's prepare some delicious croquettes.



Just mash the cauliflower with a fork, add the flour, salt, spices, and a nice drizzle of oil. Knead and finally incorporate the grated provolone.
Knead well with your hands until you obtain a soft but workable mixture.
At this point, shape the croquettes. I coated them in breadcrumbs and baked them in the oven at 200 degrees until golden.

They can be frozen and then baked in the oven as needed.
They can also be made with other boiled vegetables. The important thing is that they are finely chopped.
