.. it happened again. I boiled a whole cauliflower and since I'm the only one who eats it at home, almost all of it was left over. I don't feel like eating it boiled again, so? Let's make some tasty croquettes.
Simply mash the cauliflower with a fork, add the flour, salt, spices, and a generous drizzle of oil. Knead and finally incorporate the grated provolone.
Knead well with your hands until you get a soft but workable dough.
At this point, form the croquettes. I coated them in breadcrumbs and baked them in the oven at 200 degrees until golden brown.

They can be frozen and then baked when needed.
They can also be made with other boiled vegetables. The important thing is that they are well minced.
