

Homemade comfort food: creamy, enveloping, and flavorful pasta and potatoes, prepared in a pan by cooking the potatoes and then the pasta directly with them until a creamy consistency is achieved.


Pour a generous stream of extra virgin olive oil into the pan and add the finely chopped onion.
Add the diced potatoes, the double tomato concentrate, salt, and oregano and sauté for a few minutes.
Pour in hot water to cover the potatoes, cover with the lid and let boil for about 10–15 minutes, until the potatoes are soft and start breaking by pressing them with the spoon.
Add the mixed pasta and cook it directly with the potatoes, stirring often and mashing the potatoes to create a creamy texture.
When the pasta is cooked, add the grated parmesan, mix well and let it rest for a few minutes.
Plate and finish with oregano and a drizzle of raw extra virgin olive oil.
