

Simple potato balls that are soft inside with a crispy crust outside, perfect for a Christmas appetizer. Easy to work dough, ideal for cooking in an air fryer or oven.
Boil the potatoes in salted water until soft.
Drain the potatoes and mash them with a potato masher or a fork until a smooth puree is obtained without lumps.
Add to the puree 3-4 tablespoons of grated parmesan, 1 egg, and a pinch of salt; mix well.
Incorporate 2-3 tablespoons of all-purpose flour or cornstarch to obtain a soft yet workable dough; adjust the quantity if necessary.
Lightly grease your hands and form balls with the dough.
Cook: for air fryer set to 190°C for about 10 minutes; for a preheated oven at 200°C cook for about 15 minutes, or until golden and crispy.
Serve hot as a festive appetizer.
