

This first course really comes together with three simple ingredients.. and yet it will surprise you with its uniqueness and how good it will be. It takes less than half an hour to prepare and allows you to enjoy a healthy yet enveloping and flavorful first dish. Plus, it is entirely plant-based. Let's see together how I prepared it!


I sautéed the sliced leek in a pan with a drizzle of oil and a splash of hot water. I added the cooked cauliflower and let them go for a few minutes.
When the leek became nice and soft, I blended part of it. To the remaining cauliflower and leek, I added curry and sautéed them a bit.
I drained the pasta.. I combined the creamy dressing and the remaining pieces. I mixed it by adding the cooking water of the pasta little by little, until I obtained the right creaminess. I plated it and garnished with fresh parsley.

The ideal would be to eat it while still steaming, but if you have leftovers, keep it in the fridge and reheat it the next day.
Besides cauliflower.. leek pairs wonderfully with romanesco broccoli.
