Preparation

Wash and dry the asparagus, trim the stalk and slice them into rounds, leaving the tips whole.
- STEP 2 OF 6
In a non-stick pan, heat the garlic with extra virgin olive oil, add the asparagus and sauté.
- STEP 3 OF 6
Add half a glass of water, season with salt, and cook for 15 minutes.
- STEP 4 OF 6
In a bowl, mix the eggs, Parmesan, and a pinch of salt.
- STEP 5 OF 6
When the asparagus is cooked, pour the egg mixture into the pan, level with a spoon, and cook for 5 minutes on each side.
- STEP 6 OF 6
Use a lid to flip the frittata, transfer it to a plate, and pat with paper towels. Serve hot, warm, or cold.
