This recipe is perfect for when your fridge is empty and you only have some zucchini left at home.
Clean the zucchini and blanch them in slightly salted boiling water for 2 minutes. Cut the zucchini in half and scoop out the pulp.
Separately, mix the egg with salt, pepper, tuna, chopped capers, the zucchini pulp, and a tablespoon of breadcrumbs.
Stuff the zucchini with the filling, place them on a baking tray, and sprinkle breadcrumbs and a drizzle of oil on top.
Cook in an air fryer at 180°C for 15 minutes (or in the oven for 25 minutes).
