First, dice the seasonal vegetables we have in the fridge, and cook them with a drizzle of oil, salt, and pepper in the oven or air fryer.
Cook the spelt pasta according to the instructions on the package.
If we don't have it ready, prepare the chickpea hummus with 200 g of cooked chickpeas, 1 tablespoon of tahini, 1 of squeezed lemon juice, a pinch of salt, paprika, extra virgin olive oil, and blend.
Drain the pasta and season with the hummus, oil, and a little pasta cooking water, if necessary. Add the vegetables, which will be cooked by now, and mix.
Finish with a drizzle of raw oil, chopped parsley, and a grating of lemon zest.
