Pour the soy drink into a large enough pot and bring to a boil
Turn off the heat and pour the lemon juice in a thin stream with circular movements
Cover with the lid and wait 20 minutes
At this point, cover a colander with a clean cloth
Pour the contents of the pot
Take the top edges of the cloth and twist them to squeeze out and remove the excess water.
Let it drain well in the colander or in a ricotta mold.
Place in the fridge (I recommend overnight) to use the next day
