A delicious and quick dish to prepare, ideal for a family dinner.
Start by dry-roasting the almonds in a pan for a few minutes.
Then set them aside and in the same pan add extra virgin olive oil, finely chopped onion and fresh ginger (optional).
When the onion has softened, add the chicken cut into cubes and cook for 5 to 10 minutes.
Then pour in the soy sauce and water and cook, covered, for another 5 minutes over low heat.
At this point remove the lid, add the cornstarch to thicken and create a nice creamy sauce.
When it's ready, add the previously toasted almonds.

Serve hot, excellent with basmati rice.
