Clean and cut the potatoes into cubes.
Rinse the potatoes several times in cold water until all the starch is removed.
Boil the potatoes in boiling water with a teaspoon of baking soda for about 10 minutes.
Drain the potatoes and season with oil, salt, and herbs to taste.
Bake the potatoes in the convection oven for about 20-30 minutes.
Serve hot and crispy.

Crispy baked potatoes are great served hot, but they can also be stored and served cold. Excellent pairing with meat and fish.
