Oven-roasted potatoes, super crispy on the outside and tender on the inside. A perfect side dish to accompany many dishes.
Preheat the oven to 200°C (fan-assisted).
Peel and cut the potatoes into cubes.
Rinse the potatoes several times in cold water until the starch is completely removed.
Parboil the potatoes in boiling water with one teaspoon of baking soda for about 10 minutes.
Drain the potatoes and season with extra virgin olive oil, salt and seasonings to taste.
Roast the potatoes in the fan-assisted oven for about 20-30 minutes.
Serve hot and crispy.
Consume within 2 days
Crispy roasted potatoes are perfect served hot, but can also be stored and served cold. Great pairing with meat and fish.
