Perfect to fill or enjoy as is, to accompany your lunches or dinners, these fritters are also anti-waste, because they are made with leek leaves that are often discarded in the kitchen!
Clean and finely chop the leek leaves.
Heat 2 tablespoons of oil in a pan and cook the leeks for 5 minutes.
Turn off the heat, add the water and salt, and stir.
Transfer everything to a bowl, incorporate the egg first and then gradually add the flour, mixing well.
Put one tablespoon of oil in the pan and pour in a quarter of the mixture.
Spread the batter with a ladle to shape and thin the fritter.
Cook on both sides for a couple of minutes.
