Clean and finely chop the leaves of the leek.
Heat 2 tablespoons of oil in a pan and cook the leeks for 5 minutes.
Turn off the heat, add water, salt and mix well.
Transfer everything to a bowl, incorporate the egg first and then the flour gradually, stirring well.
Put a tablespoon of oil in the pan and pour a quarter of the mixture.
Spread the dough with a ladle to shape and thin the fritter.
Cook on both sides for a couple of minutes.
