We start by cooking the frozen spinach (I use a pan with extra virgin olive oil and garlic, but microwave or boiling works too).
We squeeze them very well and blend them in a mixer with nutmeg and salt.
Then we pour them into a bowl and gradually add the flour (the result will be quite sticky).
Without a piping bag or hands, but simply using two spoons, we make gnocchi that we drop directly into boiling salted water.
When they float to the surface, we drain them into a pan with rosemary-flavored extra virgin olive oil.
We sauté them for a few minutes to flavor them and then plate them.
Add Parmigiano Reggiano, lemon zest, and hazelnut crumbs to taste.
