We start by cooking the frozen spinach (I do it in a pan with extra virgin olive oil and garlic, but microwave or boiling works too).
Squeeze them very well and blend them in a food processor with nutmeg and salt.
Then pour them into a bowl and gradually add the flour (the result will be quite sticky).
Without a piping bag or using your hands, simply using two spoons form the gnocchi and drop them directly into boiling salted water.
When they float to the surface, drain them into a pan with extra virgin olive oil flavored with rosemary.
Sauté them for a few minutes to season, then plate.
Top to taste with Parmigiano Reggiano, lemon zest and crushed hazelnuts.
