Clean and slice the leek, cook it in a pan for 5 minutes with oil, garlic, sage, and a bit of hot water.
Keep aside about 2 tablespoons of leeks and blend the rest in a mixer.
Cook the pasta in boiling salted water.
In a pan, pour in the leek cream, add the cream and a bit of the pasta cooking water.
Add the sliced smoked salmon, the reserved leeks and cook for a couple of minutes.
Finish cooking the pasta in the sauce with more cooking water.
Add lemon zest and pepper at the end.
Plate garnishing with chopped walnuts.
