Clean and slice the leek, cook it in a pan for 5 minutes with oil, garlic, sage, and a bit of hot water.
Set aside about 2 tablespoons of leeks and blend the rest in a mixer.
Cook the pasta in boiling salted water.
In a pan, pour the leek cream, add the cream and a bit of pasta cooking water.
Add the chopped smoked salmon, the reserved leeks, and cook for a couple of minutes.
Finish cooking the pasta in the sauce with more cooking water.
Add the lemon zest and pepper at the end.
Plate and garnish with chopped walnuts.
