To prepare the avocado cream, start by removing the skin and pit from the fruit.
Then, in a blender, add the avocado pulp, onion, salt, and the juice of half a lemon, and blend everything until you get a cream. Set aside.
Meanwhile, roll out the puff pastry and use a 10 cm ring mold to cut out circles.
Place the pastry circles into tart molds, creating edges as shown in the photo, and prick the bottom with a fork to prevent bubbles during baking.
Bake at 180 degrees for about 20 minutes.
Once the baskets are baked, remove them from the oven, let them cool, and then generously fill them with the avocado cream. Garnish with a slice of salmon rolled into itself to create a rose shape.
Sprinkle a drop of lemon on the salmon and drizzle with extra virgin olive oil.
Serve them on a serving plate with some salad and serve.
