Start by preparing a good ragù, in my case vegetable, so sauté carrots, celery, onion, vegetable ragù with crumbled fake meat burgers, herbs, and tomato sauce.
While it cooks, boil the spinach in salted water for a minute, drain them, rinse with cold water, squeeze and chop them.
Add the ricotta and grated vegetable cheese, pepper, salt, and oil!
Clean and slice the potatoes with a mandoline and place them on baking paper over the grated vegetable cheese and a pinch of salt.
Stuff your roll with spinach, melting cheese, and a bit of ragù in the center.
Wrap it like a candy with baking paper and bake in a ventilated oven at 180 degrees for 40 minutes. Let it cool for a few minutes and serve!
