Unroll the puff pastry and cut it with a pastry wheel, first making two central cuts to form a cross. Then divide each section in two, and again divide each section in two, obtaining 16 pieces.
Roll each section starting from the outside towards the center.
Using the same parchment paper from the puff pastry, lift and transfer the croissants onto a baking tray.
Brush them with beaten egg and sprinkle with sesame seeds.
Bake in a preheated fan oven at 200 degrees for 10 minutes (or until they are golden on the surface).
