Baked anchovies are a classic appetizer of Mediterranean cuisine. They are made with very fresh anchovies, chopped parsley, and crunchy breadcrumbs, seasoned with olive oil and white wine vinegar. This recipe is simple to prepare and can be stored in the fridge for a few days.

Wash the very fresh anchovies well. Place them in a bowl and season with chopped parsley, oil, salt, pepper, and white wine.
Let them marinate for about half an hour. Then coat them in breadcrumbs and arrange them in the baking dish side by side.
Drizzle generously with oil and bake in the oven at 200 degrees for about 25 minutes, until perfectly golden.
Serve hot, accompanied by a wedge of lemon.
