

Anchovies in a baking dish are a classic appetizer of Mediterranean cuisine. They are made with very fresh anchovies, chopped parsley and crispy breadcrumbs, dressed with olive oil and white wine vinegar. This recipe is simple to prepare and can be stored in the refrigerator for a few days.
This is a quick but very tasty way to cook anchovies
Wash thoroughly and remove the heads from 20 very fresh anchovies
Arrange them in a baking dish side by side
Sprinkle them with plenty of chopped parsley, breadcrumbs, salt and pepper; moisten with oil and finally with white wine vinegar
Bake them in the oven and serve very hot
