
Lemon anchovies are a fresh and delicate dish from Mediterranean cuisine. Remove the scales from the anchovies, remove the head and entrails, wash and dry them, then arrange them in a large baking dish.
Whisk the olive oil with the lemon juice, pour it over the anchovies, season with salt and bake in a hot oven for about 30 minutes.
Serve the anchovies hot.
