Eviscerate and debone the anchovies and remove their heads
Wash them in water and vinegar and dry them
Peel the onions and slice them into rings
Slice the potatoes and do the same with the tomatoes after blanching them
Arrange layers of anchovies in an oiled baking dish with potatoes, onions, and tomatoes, salting and peppering each layer while sprinkling chopped parsley and drizzling with oil
Finish with breadcrumbs and bake
