

Artichoke minestrone is a delicious Italian soup full of flavor. Made with fresh artichokes, tomato, crispy pancetta and a selection of aromatics, it is a healthy and tasty dish perfect for warming up during the colder months.
Prepare the broth by boiling 1.5 liters of water with 2 stock cubes
Clean the artichokes by removing the tougher outer leaves and the tips, then soak them in acidulated water with the lemon juice
Put the olive oil, 2 tablespoons of parsley, chopped onion, garlic, celery and pancetta in a saucepan and sauté over low heat; then add the artichokes cut into wedges and let them absorb the flavors
Then add the tomato passata, salt and pepper
After 5 minutes pour in the broth; when it boils add the pasta and cook it until just al dente
Serve sprinkled with Parmigiano
