Preparation

    Clean the artichokes by removing the tougher outer leaves, the spiny part, and if necessary, the choke in the center

    Carefully trim them and place them in a bowl containing water acidulated with lemon juice as you prepare them to prevent them from browning

    Peel the potatoes, wash them, and cut them into fairly large chunks
