
Artichokes with anchovies are a delicious side dish typical of Mediterranean cuisine. The pairing of the intense flavor of the anchovies with the delicacy of the artichokes makes this dish irresistible. The artichokes are cleaned and cut into wedges, while the anchovies are melted into the olive oil together with the garlic to create a flavorful sauce. Place the cleaned and quartered artichokes to cook in a little water mixed with a bit of olive oil and the garlic clove.
Let simmer, covered, for about 15 minutes.
Meanwhile, rinse and debone the anchovies, then chop them.
When the artichokes are cooked, remove them from their cooking liquid and set aside.
In the cooking liquid, which will have reduced significantly, melt the anchovies; then return the artichokes to this tasty, slightly piquant sauce and let them simmer for about 5 minutes to absorb the flavors.
