Artichokes with cheese are a delicious and creamy side dish. The artichokes are cooked in a pan with butter and then stuffed with Emmenthal cheese and grated Parmesan. They are then gratinated in the oven until a golden and crispy crust is formed. The sweet and slightly bitter taste of the artichokes perfectly combines with the creaminess of the cheese. An excellent recipe to accompany many main dishes.
Cook the artichokes for 10 minutes in salted boiling water, drain them, cut them into wedges, and place them on a serving dish.
Put the butter, egg yolks, and the two grated cheeses in a saucepan over very low heat; stir until the mixture is smooth, pour the sauce over the artichokes, and serve.
