Cheesy artichokes are a delicious and creamy side dish. The artichokes are cooked in a pan with butter and then filled with Emmenthal and grated Parmigiano cheese. They are then gratinated in the oven until they form a golden, crispy crust. The sweet and slightly bitter taste of the artichokes combines perfectly with the creaminess of the cheese. A great recipe to accompany many main dishes.
Cook the artichokes for 10 minutes in salted boiling water, drain them, cut them into wedges and place them on a serving plate
Put the butter, the egg yolks and the two grated cheeses in a saucepan over very low heat; stir until the mixture is homogeneous, pour the sauce over the artichokes and serve
