

Olive Ascolane are an Italian appetizer typical of the Marche region. They are green olives stuffed with a delicious filling of ground beef, mortadella, breadcrumbs, chives, eggs, garlic and spices. They are then breaded and fried until crispy. Olive Ascolane are a tasty and irresistible dish that everyone loves, perfect to serve during aperitifs or as a starter.

















Pit the olives and set them aside
Sauté 1 clove of garlic in a pan with a little extra-virgin olive oil, add the meat and cook for 5 minutes
Chop the mortadella and add it to the mixture
Add salt, pepper and the finely chopped chives
Finally add some breadcrumbs to thicken the mixture
Stuff the olives with the prepared mixture, being careful not to break them
Beat the eggs and add a pinch of salt and a sprinkle of pepper
Gently coat the stuffed olives in the egg, then in the breadcrumbs, making sure they adhere well
Fry the olives in hot extra-virgin olive oil until golden
To make the breading of these snacks even crispier, you can repeat the coating process twice
