Ascolana Olives are an Italian appetizer typical of the Marche region. Pit the olives and set them aside
Sauté 1 clove of garlic in a pan with a little extra virgin olive oil, add the meat and cook for 5 minutes
Chop the mortadella and add it to the mixture
Add salt, pepper, and chopped chives
Finally, add some breadcrumbs to thicken the mixture
Stuff the olives with the prepared mixture, being careful not to break them
Beat the eggs and add a pinch of salt and a sprinkle of pepper
Gently coat the stuffed olives in the egg and then in the breadcrumbs, making sure it adheres well
Fry the olives in hot extra virgin olive oil until they are golden
To make the coating of these snacks even crunchier, you can repeat the process twice
