
Ascolana Olives
Ascolana Olives are an Italian appetizer typical of the Marche region. They are green olives stuffed with a delicious filling of ground beef, mortadella, breadcrumbs, chives, eggs, garlic, and spices. They are then breaded and fried until crispy. 50G50G - Breadcrumbsas needed

- Eggs
22 - Garlic
1Clove1Clove - Extra virgin olive oilas needed
- Salt

Preparation
- STEP 1 OF 10
Pit the olives and set them aside
- STEP 2 OF 10
Sauté 1 clove of garlic in a pan with a little extra virgin olive oil, add the meat and cook for 5 minutes

Chop the mortadella and add it to the mixture
- STEP 4 OF 10
Add salt, pepper, and chopped chives
- STEP 5 OF 10
Finally, add some breadcrumbs to thicken the mixture

Stuff the olives with the prepared mixture, being careful not to break them
- STEP 7 OF 10
Beat the eggs and add a pinch of salt and a sprinkle of pepper
- STEP 8 OF 10
Gently coat the stuffed olives in the egg and then in the breadcrumbs, making sure it adheres well

Fry the olives in hot extra virgin olive oil until they are golden
- STEP 10 OF 10
To make the coating of these snacks even crunchier, you can repeat the process twice
