

Asparagus crepes are a delicious vegetarian dish perfect for spring. The thin and soft crepes are filled with a fresh ricotta cream and crunchy asparagus, all baked with Grana cheese and nutmeg. A simple recipe, but full of fresh and aromatic flavors.













Prepare the batter by whisking together flour, eggs, milk, salt, and pepper
Steam the asparagus tips, blend them in a mixer, and mix with the ricotta, adding salt and pepper
Cook the crepes in a buttered pan
Fill them with the asparagus mixture and place them in a buttered baking dish
Cover them with cream mixed with grated Grana cheese and nutmeg and bake in a preheated oven at 200 degrees
