

Asparagus with prosciutto is a delicious spring side dish. This easy-to-prepare recipe combines the slight bitterness of asparagus with the salty flavor of prosciutto crudo. Everything is enriched with butter and grated Parmigiano cheese.
Trim the asparagus and boil them in an asparagus steamer in lightly salted water, leaving them rather al dente; drain them, trim the hard ends with a small knife and divide them into bundles of 3 or 4 asparagus each
Wrap each bundle with a slice of prosciutto crudo and place the bundles in a buttered baking dish
Pour the remaining butter, melted in a small pan, over them
Sprinkle the bundles with grated Parmigiano, spreading it evenly
Put the baking dish in a preheated oven at 200°C and leave until the surface is gratinated
Serve hot
