

Asparagus with tarragon butter is a delicious spring side dish. Fresh asparagus are steamed and then dressed with a fragrant tarragon butter sauce. This simple and elegant dish is perfect for accompanying grilled meats and fish.

Trim the asparagus by scraping the lower part of the stalks with a knife, adjust their length, then tie them into bunches and boil them in a pot of salted boiling water for about 15 minutes over moderate heat
Drain them when they are tender but still firm, let them drain, untie the bunches, then arrange the asparagus on a deep serving dish, preferably rectangular, placing the tips all on the same side, then keep them warm
Then place the butter in a small saucepan with the chopped tarragon and heat it over very low heat until it has completely melted
Remove the flavored butter from the heat before it starts to fry, pour it over the asparagus while still hot and serve immediately
