Cut the avocados in half after washing and drying them
Remove the pits and scoop out the flesh from both halves with a round fruit scoop, taking care not to damage the skins
Mix the avocado balls with the tomato cut into cubes and with the rice
Season with salt (not too much), olive oil, and plenty of lemon juice
Place the mixture into the hollowed avocados and serve
