
Babaganoush is a Middle Eastern side dish made from roasted eggplants seasoned with lemon, garlic, and spices. It is a very tasty and creamy dish, ideal to serve as a side or snack.




Wash and dry the eggplant.
Prick it with a fork in three or four places.
Place it in the oven and roast for about 15 minutes, turning it occasionally.
Remove from the oven and let it cool.
Peel it and dry off any excess moisture.
Mash it into a pulp.
Mix the lemon juice, garlic, and salt.
Pour over the eggplant puree.
Add the sesame oil and mix well.
Adjust salt and lemon juice to taste.
Place on a serving dish, drizzle with olive oil and sprinkle with paprika.
Serve with pita bread or pieces of flatbread.
