

Oven Leeks are a delicious and easy-to-make side dish. The leeks are baked with a crunchy parmesan topping and served hot and tasty. Ideal as a side for grilled meats or as a light main dish.
Clean the leeks and cut them into rings
Sauté them in a pan with a little oil over rather high heat stirring so they don't burn
Toast the flour stirring constantly with a wooden spoon let it cool and add water preferably saved from cooking some vegetables
The liquid should be added little by little stirring frantically and being careful that the flour doesn't clump
The result should have a creamy consistency
Let it cook over low heat until it thickens
Pour the leeks into a greased baking dish cover them with the flour cream and sprinkle with grated parmesan
Bake for about half an hour in a not too hot oven
