Baked Leeks are a delicious and easy-to-prepare side dish. The leeks are baked with a crispy Parmesan crust and served hot and tasty. Ideal to accompany grilled meats or as a light main dish.
Clean the leeks and cut them into rings
Sauté them in a pan with a little oil over a fairly high heat, stirring them so they don't burn
Toast the flour, stirring it continuously with a wooden spoon, let it cool, and add some water, preferably saved from cooking some vegetables
The liquid should be added gradually, stirring vigorously and ensuring the flour doesn't clump
The result should have a creamy consistency
Let it cook over low heat until it thickens
Pour the leeks into an oiled baking dish, cover them with the flour cream, and sprinkle with grated Parmesan
Bake for about half an hour at a moderate temperature
