Baked meatloaf is a classic dish from Italian tradition, perfect for a family lunch or dinner. It is a large meatloaf made with ground beef, cooked ham, salted tongue, and grated cheese, enriched with eggs, parsley, onion, and stale bread. Everything is mixed with milk, butter, and olive oil, seasoned with nutmeg, salt, and pepper. Once cooked, the meatloaf is served with buttered peas and spring onions.
Chop the stale bread and soften it in a bowl with the milk, then drain and squeeze it well, keeping the remaining milk
In another bowl, place the ground beef, grated cheese, tongue, and chopped ham; add the whole eggs, the previously used milk, chopped parsley, softened bread, necessary salt, a grind of pepper, and nutmeg
Mix the ingredients well until you get a mixture as homogeneous as possible; turn it onto a damp work surface and shape it into the typical elongated form of a meatloaf, then coat it several times in breadcrumbs so that it's completely covered
Once done, put the oil and butter in a baking dish and heat over the fire; add the finely chopped onion and let it wilt over very low heat
