
Baked meatloaf is a classic Italian dish, perfect for a family lunch or dinner. It is a large meatloaf made with ground beef, cooked ham, salted tongue and grated Grana cheese, enriched with eggs, parsley, onion and stale bread. Everything is combined with milk, butter and olive oil, seasoned with nutmeg, salt and pepper. Once cooked, the meatloaf is served with peas with butter and spring onion.











Crumble the stale bread roll and soften it in a bowl with the milk, then drain and squeeze it well, reserving the remaining milk
In another bowl place the ground beef, the grated Grana, the chopped tongue and ham; add the whole eggs, the milk used earlier, chopped parsley, the softened bread, the necessary salt, a grind of pepper and the nutmeg
Mix the ingredients well until you obtain as homogeneous a mixture as possible; turn it out onto a damp work surface and shape it into the typical elongated meatloaf form, then roll it several times in the breadcrumbs so it is fully coated
Once done, put the oil and butter in an ovenproof dish and heat over the stove; add the finely chopped onion and let it soften over very low heat
