Peel and dice the potatoes
Blanch in boiling salted water for 3 minutes then place in a baking dish with chopped bacon, olive oil, melted butter and bake in a preheated oven at 180 degrees for about 45 minutes
Turn them 2 or 3 times
Finally add the chopped parsley and mix
