Foil-wrapped potatoes are a delicious and original side dish, ideal for enhancing your meals. The potatoes are cooked inside aluminum foil together with goat cheese, olive oil and pepper. At the end of cooking, arugula is added for a touch of freshness. A real delight to enjoy hot and melty.
Thoroughly wash the potatoes, dry them with paper towels and wrap each one individually in sheets of aluminum foil
Grill them for about 1 hour, then remove the foil, cut them in half without separating them and fill them with the goat cheese (previously whipped into a cream)
Then place them in an oiled baking tray and bake in a very hot oven for about 3-4 minutes
Finally place them on a bed of arugula and serve sprinkled with pepper and drizzled with a little extra-virgin olive oil

Ideal as an accompaniment to grilled meats.
