Barbagiuai are delicious fried ravioli filled with pumpkin, ricotta, rice and grated Grana cheese. This dish, with enveloping flavors, is an absolute must of Ligurian cuisine. Their origin dates back to the 15th century and even today they remain a delicacy loved by everyone.
Cook the pumpkin in salted boiling water and separately cook the rice
Combine the pureed pumpkin and the rice with the Grana and the ricotta
Season with salt and pepper
Knead the flour with some warm water, a drizzle of olive oil and a pinch of salt
Roll out the dough, cut into squares and then fill them with the mixture prepared earlier
Fold into triangles and fry in hot peanut oil
Serve the barbagiuai with a valerian salad dressed with olive oil, salt and pepper
