Barese soup is a typical dish of Apulian cuisine, particularly popular in the city of Bari. It is a soup made with dogfish, a very tasty and appreciated blue fish in the region. The soup is enriched with the flavor of ripe tomatoes, black olives, garlic, and parsley. A rich and flavorful dish to enjoy in any season.
In a wide and shallow pan, heat enough oil with finely chopped garlic
As soon as it starts to sizzle, add the peeled tomatoes, seeded and cut into chunks, seasoning with chopped parsley, salt, and pepper
After just 5 minutes, add the olives and fish to the sauce
Cook the fish (it should become completely white), using a little water if necessary; it should not take more than 10 minutes
