

The crepe batter is a very versatile and simple basic recipe to prepare. Crepes are thin pancakes that can be filled with a variety of sweet or savory ingredients. This recipe allows you to prepare a perfect batter for your crepes in just a few steps.
In a bowl, create a well with the flour in the center, crack the eggs into it, add three or four tablespoons of milk and mix to combine everything.
Dilute the mixture by slowly pouring in the remaining milk until you achieve a rather fluid batter.
Add the butter that has been melted in a bain-marie and then allowed to cool slightly.
Salt the mixture, whisk for a few more minutes with a small whisk, and let the batter rest for at least an hour.
When it's time to cook the crepes, lightly grease the bottom of a skillet with oil or butter, let it heat up, pour in two tablespoons of batter, move the skillet so that the mixture spreads over the entire bottom, and cook on both sides.
Repeat this process.
In the case of sweet crepes, replace the salt with sugar.
