
Pancake batter is a very versatile and easy to prepare basic recipe. Pancakes are thin fritters that can be filled with numerous sweet or savory ingredients. This recipe allows you to prepare perfect batter for your pancakes in a few steps.



In a bowl, make a well with the flour in the center, crack in the eggs, add three or four tablespoons of milk, and mix to combine everything
Dilute the mixture by slowly pouring in the remaining milk until you achieve a rather fluid batter
Add the butter, melted in a double boiler and then allowed to cool slightly
Salt, whip for a few more minutes with a small whisk, and let the batter rest for at least an hour
When ready to cook the pancakes, lightly grease the bottom of a skillet with oil or butter, let it heat, pour in two tablespoons of batter, tilt the skillet so that the mixture spreads over the bottom, and cook on both sides
Repeat this process
For sweet pancakes, replace the salt with sugar
