In a pan heat a few tablespoons of olive oil, add the onion rings and sauté until softened
Add the peppers, season with salt and cook until done
Beat the eggs with two tablespoons of milk and a little salt. Pour them over the peppers; when they have set, flip the frittata, cook on the other side as well, and serve
