    Cut the chicken into fairly small pieces and let them marinate for one hour in the oil emulsified with lemon juice, salt and pepper

    Then drain them, lightly coat them with flour, dip them in the seasoned beaten egg and in the fresh breadcrumbs

    In a pan melt the clarified butter and when it foams place the pieces, browning them over a moderate heat for 15-20 minutes

    They should be crunchy on the outside and tender inside

    Drain them on absorbent paper and remember that fried chicken should be served very hot
