Breaded and Fried Chicken is a delicious traditional Italian dish, where the chicken is breaded and fried to achieve an irresistible crunchiness. Cut the chicken into fairly small pieces and let them marinate for an hour in the oil emulsified with lemon juice, salt, and pepper.

In a pan, melt the clarified butter and when it foams, place the pieces in, browning them over a not too high heat for 15-20 minutes.
They should be crispy on the outside and tender on the inside.
