
Breaded and Fried Chicken is a delightful traditional Italian dish, where the chicken is breaded and fried to achieve an irresistible crunch. Cut the chicken into fairly small pieces and let them soak for an hour in the oil mixed with lemon juice, salt, and pepper.
Then drain them, lightly flour them, dip them in beaten salted eggs, and into fresh breadcrumbs.
In a pan, melt the clarified butter, and when it foams, place the pieces in it, making them brown over medium heat for 15-20 minutes.
They should be crispy on the outside and tender on the inside.
Dry them on absorbent paper and remember that fried chicken should be served piping hot.
